Wood-fire kitchen · Croix-Rousse, Lyon
Everything on the menu has met the fire.
One hearth, burning oak from the Monts du Lyonnais. Thirty-six seats, a menu that follows the flame from first light to last ember.

The fire, hour by hour
-
Flame
The oak is roaring. Bread goes in first, then the beef rib, seared hard and fast at the front of the hearth.
-
Coals
The flames drop back. Fish and shellfish cook on the grill, a hand's width above the glowing coals.
-
Embers
Whole vegetables are buried in the embers and left to blister for an hour, until they collapse.
-
Ash
What heat remains goes into tomorrow: smoked butter, dried chillies, and the custard for dessert.
